Pure Via Baker’s Secret® is a blend of carefully selected ingredients derivered from nature. Erythritol is the first and most prominent ingredient, and is naturally made by fermenting sugar beet and non-GMO corn. Stevia is then added to our blend and then enhanced with some natural flavour from vanilla, apple extract and cream and in some products molasses. We also use acacia gum in our Perfect Caster Sugar Alternative to give your bakes a great texture.
Erythritol is a sugar alcohol used to replace sugar as it has zero calories. It is found naturally in pears, grapes, melons and other fruits. It is about 70% as sweet as sugar, but has no calories and no impact on blood-sugar levels*. It also helps give our granulated products a crunchy texture.

Because we want to craft the best for you, our Erythritol comes from a fermentation process using only non-GMO corn mimicking the natural fermentation that produces Erythritol in the wild. The resulting Erythritol is then purified, dried and sieved, resulting in crunchy, great tasting crystals.

At Pure Via® we love Erythritol because of its crystallised texture, delicious sweetness, and naturality. However, when Erythritol dissolves in your mouth, you may experience a cooling sensation called the ‘cooling effect’ which feels a little like a minty aftertaste: if this happens to you, know that it’s completely normal. Step 1: Harvesting
We start by harvesting the leaves from the field and then drying and crushing them to prepare them for Step 2 – Extraction.

Step 3: Blending

Acacia gum, also known as gum Arabic and acacia fiber, is a natural gum made from the sap of the Acacia tree. In addition to having a natural origin, this gum does not contain calories and gluten and is therefore perfect for low-calorie, keto and vegan diets. Since our Pure Via Baker’s Secret® Caster Sugar Alternative does not contain sugar, it won’t help yeast to rise. However, yeast can rise without sugar, so we recommend taking a couple of extra steps. The first would be to pre-treat yeast with warm water and flour, letting it sit for a few minutes before adding it to the recipe. Then, we would recommend giving your baked goods more time to rise.
